Lisa's Thai Salmon
Simmer together for 6-8 min:
— 1 can coconut milk
— 3 slices dried galanga root
— 1T red curry paste
— 1/3 C lemon or lime juice
— 2 cloves crushed garlic
Grease a large baking dish, place in it one large wild Alaskan Salmon Fillet
Pour coconut sauce over fillet, sprinkle with one bunch green onion, chopped
Cover and bake 20 minutes or until fish is done. Garnish with fresh chopped cilantro and serve with rice.
